Super Easy Breakfast Casserole

With having a large family, it's vital to find good, not to expensive meals to make for the whole crew. I always keep my eyes opened for new things to try and I add my own twist on things. Heres something I made tonight for my family and I thought it was something worth sharing with you all.

Prep time: 5-10 min Cook time: 1 hr 8-12 servings
*Ingredients
  • 24 oz. frozen hash browns (about 8 cups)
  • 16 oz. cubed ham (I used deli ham and chopped it up)
  • 8 oz. shredded cheese
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • cooking spray
*Directions:
1. Preheat oven to 350 degrees
2. Add the frozen potatoes, ham and cheese to a large bowl. Toss to combine. Pour the mixture into a 9x13 baking dish that has been sprayed with cooking spray.
                            ( I added bacon and tomatoes to the potato, ham and cheese mixture)
3. In the same bowl from step one, whisk the eggs with the milk, salt and pepper.
4. Pour the egg mixture over the hash brown mixture.
5. Pat everything down with the back of a wooden spoon (I used a small plastic one since I don't have a wooden spoon)
6. Bake for one hour (I bake it a little longer since my oven is electric) The center should be set and the edges should be golden brown.

Baked Omelet

Baked Omelet                       6 servings

Ingredients
  • 3 green onions, sliced
  • 1/2 cup sweet red peppers, chopped
  • 1 tsp veg oil
  • 6 eggs beaten
  • 1 cup Swiss cheese, shredded
  • 6 oz cooked ham, cubed
  • 1/3 cup water
Step 1: In a 10 in oven proof skillet (I didn't use one at first then transferred it after draining oil), sauté onions and red peppers in oil for 5 mins or so.
Step 2: In a bowl, combine eggs, cheese, ham, and water. After combined, pour it over the veggie mix in the oven proof pan.
Step 3: Bake uncovered at 375 degrees for 15-20 minutes or until set.

FYI: I double the recipe since my family is bigger.  In these photos, I used bacon, bell pepper, mushrooms and white onions as well as all the other ingredients. It came out great! Please let me know if you end up making it and if you liked it or not. 






 

Introduction

 Hello everyone, I'm Amanda and that big guy napping on me is my husband Stephen. I wanted to take a moment and do a quick introduction and tell you a little about myself. I am married to a wonderful man and between the two of us we have 8 kids. LOL yes I said 8! We are a mine, yours and ours sort of thing but in reality we say our kids about all of them. 
I have all sorts of hobbies, such as photography (which is one of my favorites), cooking (always trying new things and putting new things together on my own), baking (which could go with cooking but really they aren't the same lol), arts and crafts (finding cool inexpensive things to decorate my home is always fun), I also have recently gotten into couponing and getting FREE
(who doesn't love getting free things in the mail??!!)
I am huge on family and making sure to spend time with them as much as possible. There's just a taste of who I am!
