Prep time: 5-10 min Cook time: 1 hr 8-12 servings
*Ingredients
- 24 oz. frozen hash browns (about 8 cups)
- 16 oz. cubed ham (I used deli ham and chopped it up)
- 8 oz. shredded cheese
- 12 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- cooking spray
*Directions:
1. Preheat oven to 350 degrees2. Add the frozen potatoes, ham and cheese to a large bowl. Toss to combine. Pour the mixture into a 9x13 baking dish that has been sprayed with cooking spray.
( I added bacon and tomatoes to the potato, ham and cheese mixture)
3. In the same bowl from step one, whisk the eggs with the milk, salt and pepper.
4. Pour the egg mixture over the hash brown mixture.
5. Pat everything down with the back of a wooden spoon (I used a small plastic one since I don't have a wooden spoon)
6. Bake for one hour (I bake it a little longer since my oven is electric) The center should be set and the edges should be golden brown.
